Hi guys, as you know for this month I’m cooking out of Cook Once Eat All Week by Cassy Joy Garcia. This cookbook consists of three different dinner recipes every week from three different ingredient staples. Out of the 26 weeks to choose from, I decided on week 9 for my first week. Consisting of kale, corn, and chicken.
Initially, when deciding where to start off, I knew I wanted to start with chicken as my first protein for meal prep. But kale and corn are two veggies I enjoy so I was quick to decide on this particular week from the chicken section. I also don’t eat Lacinato (dino) kale often so this was a great way to learn how to incorporate it into my meals more.
And not only did I want something that was easy, because nothing gets easier than baked chicken breast, but also something that was familiar and comforting. Making my review of this week really about how good the dinner recipes are. Since everything else will come easy for me.
And Garcia makes everything easy as well since she compiles your grocery list for each week. When it comes to the ingredients, you’ll find that it’s very flexible to make substitutions. I went ahead with everything on the list though since I wanted to give a fair review of everything. The only ingredient swap I did was for the salad dressing. I used Greek yogurt instead of sour cream or coconut cream. I also used Queso Fresco instead of Cotija cheese for my tacos.
